Easy American-style pancake recipe

It’s been snowing all over the UK today, which is always a good excuse to stay home and cook with your housemates. Have you heard of Pancake Day (Shrove Tuesday) in the UK? While revellers flood the streets of Rio de Janeiro and New Orleans for Carnaval and Mardi Gras celebrations, British people traditionally stay home making pancakes together. If you or your housemates are from France, you might prefer to make thin crepes or savoury galettes, so we’re sharing our recipe for sweet American-style fluffy pancakes, which make a great dessert or breakfast on Pancake Day.

Ingredients

240g plain flour

50g granulated sugar

4 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

375ml milk (you might need an extra 50 ml)

60g butter (melted and cooled)

2 teaspoons vanilla essence

1 large egg

Toppings of your choice (see step 8)

Method

  1. Add the flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Make a well in the centre and add the milk, melted butter, vanilla essence and egg.

  2. Whisk the wet ingredients together first before slowly folding them into the dry ingredients using a large spoon.

  3. Mix together until you have a smooth batter (If the thick, creamy batter doesn’t pour smoothly, you can add a couple of tablespoons of milk into the batter until it’s smooth enough)

  4. Leave the batter to rest for 5 minutes while heating up the non-stick pan on a medium heat Lower the heat and grease the pan lightly with butter.

  5. Using a ladle, pour some batter onto the pan and spread out gently into a round shape (about 10cm across) with the back of the ladle or a spatula.

  6. When bubbles begin to appear on the surface of your pancake, flip with a spatula and cook the other side until golden and slightly crispy.

  7. Repeat with remaining batter, re-greasing the pan when necessary.

  8. Serve your fluffy pancakes immediately with toppings of your choice (we like to stack them and drizzle them with maple syrup, golden syrup, honey, lemon juice, sugar, or with yoghurt and fresh fruit like bananas, raspberries, etc.)
